Kozhikode’s Famous Rahmath Hotel Biryani, Chicken, Mutton and Beef Biryani, Mutton Stew, Surprise Collab with Venezuelan-American blogger, Volpe Where Are You
A much-loved biryani destination in Kozhikode is Rahmath Hotel, famous for its meaty biryani, led by beef and mutton. Although they offer many varieties of biryani including chicken, fish, prawns, mussels and squid, it’s the meat biryanis that draw in serpentine queues of people especially on weekends.
Food Lovers’ editor, Kripal Amanna meets Mohammed Suhail, 2nd generation owner of Rahmath Hotel and explores the making of the biryani before sitting down to a sumptuous biryani meal and a surprise collab with Carlos Volpe, a visiting Venezuelan blogger from Miami who produces insightful destination stories that make for an interesting watch. Mutton stew
An aromatic stew, the meat has soaked up the lush creaminess of the coconut milk and the savouriness of the onions which also lend a gentle bite. the potatoes in the stew also add to the body of this dish. The meat pieces are tender and thoughtfully sized small, make this a dish that’s convenient to share. Enjoy this with soft, puffy, rice pathiris.

Kallumakaya Fry
Cooked in a thick gravy made of onions, tomatoes, green chillies, the kallumakaya or mussels are cooked to the perfect texture that results in a juicy, yielding bite of this mollusc. This preparation displays a harmonious balance of savoury, sweet, sour, the warmth that comes from slivers of ginger, and is perfect to be mopped up with the rice pathiri.

The white leghorn chicken is cooked twice, first in the masala and next, as the biryani simmers on dum. The bird is juicy and moist. The flavour of the biryani is quite gentle, if you like it spicy, you can always perk things up with the lemon date and chilli pickle.
